Sakonis Restaurant Style Indo Chinese Chilli Paneer Recipe

For my friends and family and for those of you that have been following for a while, you’ll know that my obsession with chilli paneer is REAL! For years I’ve trialled and tested different ways of making a similar chilli paneer to my much loved chilli paneer from Sakonis. After 18 years of going, I have FINALLY mustered up a recipe that resembles it somewhat! It’s absolutely delicious and the best part? The paneer is air fried so it’s kinda healthy right?! I don’t use MSG (ajinimoto) which is commonly found in restaurant indo Chinese food and is known to enhance flavours. Enjoy! Cooking time: 25 minutes Serves: 4 depending on how much they love paneer 😉 Ingredients: Paneer marinade: 1 tablespoon olive oil 500g cubed paneer 1 heaped tablespoon cornflour 3 tablespoon dark soy sauce 3 tablespoon light soy sauce Mix together and air fry 20 min/till cooked. We have a Tefal XL Family Airfryer. If you dont have an airfryer, you can deep fry. Base: 1 tablespoon olive oil 1 tablespoon sesame oil 3 tablespoon dark soy sauce 3 tablespoon light soy 1 tablespoon chilli sauce 1 inch ginger piece minced 20 cloves of garlic minced 6 green chillies 1 green pepper 1 red pepper A pinch of  black pepper 1 tbsp garlic granules 3 spring onions 1 cup shredded lettuce For full method, see below:

Creamy Mushroom & Spinach Pasta Recipe

I’m always trying to make healthier versions of my favourite foods.  Here is my quick creamy mushroom and spinach pasta recipe – one of our favourites! Ingredients: 400g pasta of your choice Sauce: 2 tin of chopped tomatoes 1 tablespoon of tomato puree 1 teaspoon of maple syrup 1 tablespoon of harissa paste 2 green chillies 2 teaspoons red chilli 1 teaspoon dried chilli flakes 9 cloves of garlic 1 tub of quark 1 tub of philidelphia 30g cheddar cheese ½ teaspoon garlic granules ½ teaspoon onion granules 1 onion Basil Mixed herbs Salt to taste Large box of chopped mushrooms Large bag of spinach chopped Method:
  1. Boil the pasta with a splash of oil and salt till cooked al dente
  2. Heat a tablespoon of oil in a separate pan, add onions. After a few minutes, add the garlic and red chilli flakes.
  3. Next add the chopped tomatoes and tomato puree and allow to soften. Mash using your utensil.
  4. Add in the maple syrup, harissa paste, onion granules, garlic granules, salt and green chillies.
  5. Add in the cream cheese, cheddar cheese and quark and mix well.
  6. Add in the mushrooms and spinach and allow to reduce
  7. Mix in the pasta and add basil and mixed herbs
Serve with a side salad and garlic bread

35 … Reflection & Outlook

35.

It’s been a rollercoaster of a year with so much change (something I’ve never been good at) but through it:

• I’ve learnt that I can take myself back to a calm place through meditation
• I’ve learnt that my family is my number one priority – seems like a silly realisation but I was so overwhelmed (self inflicted) at the beginning of the year (work, business, blog, family, book etc) and through my vision board at the Ignite workshop with Asian Women Mean Business, it was crystal clear that the number one thing that brings me joy is my family and everything I do, is for them.
• I’ve learnt to reflect on relationships and really hone in on how I feel when being around certain people and have unapologetically distanced myself from those that do not uplift me. I AM responsible for who I allow in both in person and on social media.
• I’ve learnt to surround myself with those that ride the lows with me but also celebrate my highs with me and vice versa – it may sound cliché but “real women fix each other’s crowns” and all that!
• I’ve calmed down in some (I’m working on the “all” part! Haha) situations and take a deep breath before responding rather than going crazy! For those of you that know me, know how I generally have a pressing urgency to deal with things there and then, sometimes not using a rational head!
• I’ve learnt that tomorrow isn’t promised to anyone; cherish your parents and loved ones.
• I’ve learnt to say no to going to places that do not bring me joy.
• I’ve learnt to be kinder to myself; I haven’t lowered my expectations of myself, I’ve just learnt to accept that it’s ok if I don’t always meet them.
• I’ve learnt the importance of reflection; especially when looking through Saajan’s open heart surgery pictures. I am proud of how far we’ve come from the time when he was born.
• I’ve learnt that despite lacking massively in confidence (that may come as a surprise to some that don’t know me personally!), my kids push me out of my comfort zone continuously and bring out the lioness in me. I’d set myself the goal of raising more awareness within our community this last year; I’m so pleased we’ve been able to with the support of Sri Guru Singh Sabha Gurdwara and Ramgharia Gurdwara, The Sikh Channel and The Barsi Smagam from setting up stalls, to sharing posters at the Gurdwara, to going totally out of my comfort zone and being interviewed on the The Sikh Channel.
• I’ve learnt that my judgement still resides and sometimes clouds my judgement; watching Saajan in the Masai Mara was proof of that. I was terrified to take him out of fear of how he’d respond to the animals so close. It was better than I ever could have imagined.
• I’m grateful for my family, my friends and all the wonderful people that I’ve met through these squares; many of which I’ve had the privilege of meeting in person now!
• I’ve learnt that I still need to work on my language when speaking to myself or about myself; I am my own worst critic still.
• Though I’ve felt so poorly over the last two weeks, it was bliss to be locked away in a room alone. My silver lining was the realisation that I really need a break from the hustle and bustle of “life” every so often and that the time it takes to tidy up a house after two weeks is the same as after a day. I put pressure on myself to maintain a certain standard; that’s on me. I realised that as much as I love my husband and kids, having time alone in silence is so important for my mental well-being. When Arjun was first born, being alone terrified me because of the loud voices in my head. I recognise my growth.
• It isn’t something I’ve learnt this year, but I continue to remind myself that it’s ok to have down days and remind myself that “this too shall pass”.
• I continue to remind myself that life is such that we can’t control every single thing that happens, we can only control the way we respond.
• Andddd I’ve learnt that I CAN do a headstand if I focus and put my mind to it thakns to Deepa 4 Yoga!

This year I’d like to keep my focus simple;

I’d like to grow in managing my inner self by surrendering to things I can’t control and to master the art of staying CALM; something my dad has nailed. I often let my temper get the better of me be it because the sink is full of dishes or the kids aren’t listening or because I’m panicking over something or another; I intend to do this through practicing meditation more, drawing on the knowledge and experience of friends who are further along in this journey of self development and through exploring more of my pull towards Sikhi through paat and kirtan.

Cheese and Onion Pies Recipe

This is such a quick and easy recipe which provides a cosy hearty dinner! The perfect alternative to a takeaway – it definitely satisfies my cravings! To make 4 pasties: Ingredients: 200g boiled mashed potatoes 200g cheddar cheese 180g philidelphia / soft cheese (I use lightest) 1 teaspoon mustard powder 1 large finely diced onion Salt to taste 1 x sheet of ready rolled puff pastry Method: 1) Boil the potatoes (I always chop in to chunks for quicker cooking) 2) Mash the potatoes 3) Add the cream cheese, salt, mustard powder and onions and mix well 4) Finally mix in the grated cheese 5) Cut puff pastry in to 4 equal parts, place filling on one half of each part and then fold over and seal. 6) Cook at 180c or untill golden brown I serve with mushy peas and chips! COVID-19 Homeschooling Year 1 – Useful Resources

I’m sure I’m not alone in absolutely feeling a little overwhelmed with the thought of having to home school! I’ve been sent several resources and fun ideas and though I’ve not yet used them, I thought I’d share them all with you here. We intend on making Arjun’s home-schooling experience an immersive one but I know there’s going to be a very fine line between making it fun/hands on and reminding him that it’s still school! We will be incorporating some cooking, baking, some D&T and general life skills as well as – feel free to share your ideas with me please! I’ll continue to update this! I involved Arjun in compiling it to ensure I incorporated his favourite parts of his school day (show and tell haha!). Day one went pretty well – it helped having a timetable to fall back on. We started with football in the morning and then followed the timetable loosely. As I’d scheduled in a whole hour for each subject, there was some “fat” embedded in to the time and it meant he got a break between each session. He did two worksheets per topic and I used the whiteboard to explain the basics so he was able to understand.
I’m totally aware that emotions are going to be heightened soon enough with frustrations mounting of being stuck at home so I’ve implemented a few things to try and help manage any outbursts while also praising positive behaviour. I’ve printed off a reward chart that Arjun’s school teacher in reception used which he was really motivated by – you start at green grass, progress to blue skies, sunshine, rainbow and then to pot of gold. I’ve printed out Arjun and Saajan’s names and will move them up to reward positive behaviour. Arjun was extremely motivated by his reward chart and it really kept his efforts focused on positive behaviours.
At school, they have a thinking tree in Arjun’s class if any child needs a time out – I’ve decided to use a thinking plant at home. And if we have any major outbursts, Arjun can escape to the den he has made in his bedroom for a timeout. I’ve also utilised an educational pack that the lovely Chan from Sparkle Stars sent us for Christmas for our “How are you feeling” board which I’ll ask them each morning.
And finally, I’ve stuck up an A3 sheet of paper and topped it with sticky back plastic to create a whiteboard 🙂
